Post-Workout Chicken Salad using Zorabian Chicken Breast Boneless

Preparation Time: 15 Minutes,
Cooking Time: 10 Minutes,
Total Time: 25 Minutes

Ingredients:

For Dressing:

  • 1 Spring Onion, finely chopped
  • 1 sprig Dill, finely chopped
  • 1 tsp Coriander (dried or fresh)
  • 1 tbsp Sour Cream
  • 2 tbsp Yogurt
  • Salt, to taste
  • Pepper, to taste
  • 1 clove Garlic
  • 1/2 Lime, juiced
  • 1 tsp Honey (optional)

For Pan-Fried Chicken:

For Salad

  • 4 tbsp Dressing (prepared)
  • 1 piece of 450g Pan-Fried Chicken (sliced)
  • 1 head Romaine Lettuce, chopped
  • 6-7 Baby Spinach leaves
  • 6-7 Cherry Tomatoes, quartered
  • Sour Cream, to garnish

Instructions:

  1. Whisk all the ingredients mentioned for dressing and set them aside.
  2. For the Pan-Fried Chicken: Marinate the chicken in the same bowl as the dressing. Add spices and lime juice, and let it marinate for 10 minutes.
  3. Heat a pan on medium with 1 tsp of oil. Add the marinated chicken (1 piece out of 450g) and fry for about 4 minutes on each side until evenly cooked through.
  4. Remove the chicken from the pan and let it rest for 5 minutes before cutting it into bite-sized pieces.
  5. Combine all the ingredients for the salad in a large bowl and mix well.
  6. Top the salad with sour cream to garnish.
  7. Enjoy!
