  • Salt to taste
  • 1/4 cup cooking oil or ghee
  • 2 bay leaves
  • Green cardamom pods & cloves – 4 each
  • 1 cinnamon stick
  • 1 teaspoon saffron
  • 2 drops kewra water
  • 1 tablespoon rose water
  • ¼ cup of milk
  • Chopped coriander & mint leaves – 1/2 cup each

Chicken biryani is among the famous Mughlai foods. Prepare a saffron concoction by adding them to the milk and keep it aside. Take a large pot and heat the oil or ghee. Add bay leaves, green cardamom, cloves, and cinnamon, and saute for about a minute. Then add the sliced onions and ginger-garlic paste, and saute them for about two minutes. Add the chicken pieces in it and cook for another 5 minutes. Add the chopped tomatoes, red chilli powder, turmeric powder, biryani masala, and salt. Cook until the masala forms a thick paste and also the chicken becomes tender. 

In a separate pot, cook the soaked rice partially for about 5 minutes and drain the water. Take another large pot and add a layer of rice to it, then add a layer of chicken, and repeat until you add it all. Add the soaked saffron, kewra water, rose water, and ghee on top of the layers. Sprinkle the chopped coriander leaves and mint leaves over them. Cover the pot and seal the edges so that the steam does not escape the pot. Cook on low heat for 15-20 minutes until you get the aroma. Garnish the biryani with fried onions and serve hot with salad and raita. Before cooking chicken Haleem, soak the three types of dal along with the broken wheat in water for at least 2 hours. Take a large pot, and then heat ghee or oil in it. Add the chopped onions and saute them for about a couple of minutes until they become translucent. Now add the ginger-garlic paste and sauté all the masala for another minute. Next, add chicken along with red chilli powder, turmeric powder, and garam masala. Add salt and cook until the chicken becomes tender.

Drain the soaked dal and broken wheat, and add them to the pot. Add water and cook on low heat for 2-3 hours. Stir occasionally until the dal and wheat form a smooth and thick mixture. Serve hot with fried onions, fresh coriander leaves, and lemon wedges.

  • 2 boiled eggs
  • 1 tablespoon each red chilly, cumin, coriander, and turmeric powder
  • 3 teaspoon ginger garlic paste
  • 1/2  cup mustard oil
  • Salt as Per Taste
  • Whole spices – cardamom, peppercorns both white and black, cinnamon, and bay leaves
  • 100 grams cashew nut paste
  • 1 tablespoon fresh cream
  • 2 big onions and tomatoes chopped
  • 1 small bunch of fresh coriander leaves

The tandoori cheese naan is a slightly modern twist on the famous Naan. For this, the first thing that you need to do is take a big mixing bowl to knead the dough quickly.
