Ingredients Required for Chicken Rogan Josh:
- Farm fresh chicken breast boneless – 1 Packet (450 grams)
- Onions (finely chopped) – 2 large
- Tomatoes (finely chopped) – 2 medium
- Ginger-garlic paste – 2 tablespoons
- Yogurt – 1/2 cup
- Red chili powder – 1 teaspoon (adjust to taste)
- Kashmiri red chili powder – 1 teaspoon (for color)
- Turmeric powder – 1/2 teaspoon
- Coriander powder – 1 teaspoon
- Cumin powder – 1/2 teaspoon
- Garam masala – 1 teaspoon
- Fennel seeds – 1/2 teaspoon
- Cloves – 4-5
- Green cardamom – 2
- Cinnamon stick – 1-inch
- Bay leaves – 2
- Salt – to taste
- Cooking oil – 3 tablespoons
- Fresh coriander leaves (for garnish)
Cooking Instructions for Chicken Rogan Josh:
- Take a bowl to marinate the chicken pieces with yogurt, red chili powder, turmeric powder, and Kashmiri red chili powder.
- Add coriander powder, cumin powder, half of the ginger-garlic paste, and a pinch of salt. Coat the chicken evenly with the masala.
- Rest it for at least 30 minutes, or refrigerate for a few hours for better flavor.
- Heat the cooking oil in a deep pan over medium heat.
- Add fennel seeds, cloves, green cardamom, cinnamon stick, and bay leaves. Sauté for a minute until aromatic.
- Add the finely chopped onions to the pan. Sauté until the onions turn translucent and start to brown.
- Add the remaining ginger-garlic paste and cook for another minute.
- Add the finely chopped tomatoes to the pan. Cook until the tomatoes soften and the oil starts to separate from the mixture.
- Add the marinated chicken to the pan and cook on medium-high heat for about 5-7 minutes.
- Stir occasionally, until the chicken changes color and begins to brown.
- Reduce the heat to low and then add a cup of water to the pan and stir well.
- Cover and simmer for about 15-20 minutes, stir occasionally until the chicken is cooked.
- Sprinkle garam masala over the chicken and mix gently.
- Garnish with fresh coriander leaves and serve hot with steamed rice or naan.
