Chicken Quinoa Salad with Avocado and Black Beans using Zorabian Chicken Breast Boneless

Chicken Quinoa Salad

Ingredients:

  • 1 packet of Zorabian Chicken Breast Boneless
  • 1 cup quinoa, cooked and cooled
  • 1/2 onion, chopped
  • 1 cup black beans, drained and rinsed
  • 2 ears of corn, grilled and removed from cob (or 1 small can niblets)
  • 1 large avocado
  • 4 limes
  • 1 cucumber slices
  • 3/4 cup fresh coriander
  • 2 1/2 tbsp sugar
  • Sea salt, to taste

Cooking Instructions:

  1. Season the chicken breasts with salt and pepper. Grill the chicken for 6-7 minutes on each side, or until fully cooked. Let the chicken rest for 5 minutes before slicing it.
  2. Combine the onion, black beans, corn, chicken, and quinoa, cucumber slices in a big bowl.
  3. To prepare the dressing, blend together sugar, coriander, and lime juice in a blender.
  4. Dice the avocado and mix it with the dressing. Add avocado to the mixture of quinoa.
  5. Drizzle the dressing over the quinoa mixture and stir well. Add a little sea salt to taste.
