Ingredients Required for Kashmiri Chicken Curry Recipe:
- Pre-Cut Chicken Skinless – 1 Packet (500 grams)
- Onions (finely chopped) – 2 large
- Tomatoes (finely chopped) – 2 medium
- Ginger-garlic paste – 2 tablespoons
- Yogurt – 1/2 cup
- Red chili powder – 1 teaspoon (adjust to taste)
- Kashmiri red chili powder – 1 teaspoon (for color)
- Turmeric powder – 1/2 teaspoon
- Coriander powder – 1 teaspoon
- Cumin powder – 1/2 teaspoon
- Garam masala – 1 teaspoon
- Fennel seeds – 1/2 teaspoon
- Cloves – 4-5
- Green cardamom – 2
- Cinnamon stick – 1-inch
- Bay leaves – 2
- Salt – to taste
- Cooking oil – 3 tablespoons
- Fresh coriander leaves (for garnish)
Cooking Instructions for Kashmiri Chicken Curry:
- Marinate the chicken in a mixing bowl, with yogurt, red chili powder, and turmeric powder.
- Add Kashmiri red chili powder, coriander powder, cumin powder, half of the ginger-garlic paste, and a pinch of salt.
- Mix well to coat the chicken evenly with the spices. Cover and marinate for at least 30 minutes.
- Heat the cooking oil in a kadhai over medium heat.
- Add fennel seeds, cloves, green cardamom, cinnamon stick, and bay leaves. Sauté for a minute.
- Add the chopped onions to the pan. Sauté until the onions turn translucent and become brown.
- Add the remaining ginger-garlic paste and cook for another couple of minutes.
- Add the finely chopped tomatoes and cook until they soften and the oil starts to separate.
- Add the marinated chicken and cook on medium-high heat for about 5-7 minutes.
- Stir occasionally, until the chicken becomes brown and tender.
- Reduce the heat to low and add a cup of water to the pan and mix well.
- Cover and simmer for about 15-20 minutes.
- Stir occasionally until the chicken is thoroughly cooked.
- Add garam masala over the chicken and give it a mix.
- Serve hot with steamed rice, roti, or naan.
