Ingredients:
- 1 packet of Zorabian Chicken Mince (450g)
- 1 tablespoon peanut oil
- 1/2 onion, finely diced
- 1/2 tablespoon minced garlic
- 1 cup red or green pepper, finely diced
- 8 ounces water chestnuts, drained & finely diced
- For the Sauce:
- 3 tablespoons soy sauce
- 3 tablespoons hoisin sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon peanut butter
- 1 tablespoon honey
- 2 teaspoons sweet chili sauce
- 1/2 teaspoon garlic powder
- 1/4 teaspoon powdered ginger
Cooking Instructions:
- Mix the sauce ingredients thoroughly with a whisk. It might be necessary to microwave the mixture for 30 to 60 seconds to melt the tougher peanut butter and make sure everything is thoroughly combined.
- In a skillet, heat two tablespoons of peanut oil. Add minced garlic, onion, and chicken mince once heated.
- Simmer for 5 to 10 minutes, or until the chicken is browned and the onions are transparent.
- When the peppers are starting to go tender, add the water chestnuts and peppers and simmer for about five minutes.
- Once the chicken and vegetables are well covered and heated through, add the sauce and simmer over low heat.
- Serve over rice or noodles, on lettuce leaves, or over your favorite Asian salad!
