How to make the Kadai chicken
Ingredients
- 250 gms of Zorabian’s Pre-Cut Chicken Skinless
- Salt to taste
- Turmeric powder – ¼ tsp
- Kashmiri chilli powder – ½ tsp
- Garam Masala powder – ¼ tsp
- Kasuri methi – 1 tsp (crushed)
- Oil – 1 tbsp
- Ghee or butter- 1 tsp
- Bay leaf -1
- Green chilli – 1 or 2 slits into 2
- Onion – Cube half and cut the other half finely
- Tomato – 1 big (pureed)
- Ginger garlic paste – 1 tbsp (fresh)
- Cream – 1 tbsp
- A piece of coal – if you wish to have the smoky flavour, and taste
For the Kadai Masala (dry roast all the ingredients, cool, and powder coarsely)
- Coriander seeds 2 tbsp
- Cummin seeds 1 tbsp
- Black Peppercorns – 1 tbsp
- Whole red chillies 3 to 4 (you can increase the quantity if you like spicy)
Method for Making Kadai Chicken Recipe
- Take a Kadai or wok and add in the oil and butter. Add the bay leaf, finely chopped onion, slit green chillies, and ginger garlic paste and saute till the raw smell of the garlic disappears and the onions are translucent. Now add in the cubed onions and capsicum and cook for 1-2 minutes.
- Add in the tomato puree, turmeric powder, and Kashmiri chili powder, salt to taste, and cook till the tomato puree is well cooked
- Add in the chicken pieces and mix well till they turn white from pink. Add the roasted and coarsely ground kadai masala. Mix well. Add in ½ cup water and cover and cook for 10 to 12 minutes.
- Open and adjust salt and spices. Add in the crushed kasuri methi. Cook till done. Mix in the cream. The cream gives it a rich taste and a creamy texture (but is optional). Switch off the gas. Cover and keep for 10 minutes till all the flavours are soaked in. Garnish with the chopped coriander leaves. Serve hot.
Cooking Tips
- Ensure that the tomatoes and all masalas are well cooked to avoid any raw taste and to get the perfect Kadai Chicken
- You can decide to dry out the complete water and keep the gravy in a coating consistency. If you wish to have a more watery consistency gravy, add in a little more water as desired.
- If you want to add a smoky taste to your kadai chicken, once the dish is done transfer to a serving dish. Take a small bowl and add to it a piece of coal after heating it on an open flame. Keep the bowl with the coal in the centre of the kadai chicken dish and pour some ghee over the coal. It will start smoking. Now cover and keep for 3 to 5 minutes for a smoked karahi chicken.
- Serve with parathas, naan, roti, phulkas, or with ghee rice or jeera rice and refreshing raita. You have a meal ready in a jiffy with this Kadai chicken recipe. You can now make your favourite kadai chicken at home itself.
