Migrants from Burma brought the cuisine to Indian coasts during that era. The Arabic or Lebanese bread, which is square-shaped and deep-fried bread or wraps loaded with meat, and the Mughlai paratha share many similarities, both from India’s Awadhi region. They often roll the roti in a beaten egg and shallow fry it after stuffing it to the brim with minced meat.

Ingredients required for Chicken Baida Roti Recipe

  • 10 Eggs
  • 450 gms Fresh Zorabian chicken mince
  • 1 teaspoon salt
  • A big tablespoon of oil
  • ¼ tablespoon baking powder
  • A medium onion sliced minutely
  • 1 tablespoon adrak lasun masala
  • 1 cup of maida (all-purpose flour)
  • 2 Tomatoes minutely sliced
  • 2 green chillies pounded into a paste
  • ½ teaspoon of Turmeric powder
  • 2 teaspoons of red chilli powder 1 1/2 teaspoons
  • Just a pinch of Garam masala powder
  • Fresh coriander or cilantro to sprinkle on top for garnishing

Method

Step 1:

First, combine in a bowl the refined flour, salt, oil, baking powder, and 1 egg. A soft dough will form after adding 1/4 cup water.

Step 2:

Roll out the dough into an 8-inch square Rotis after dividing it into 4 equal halves.

Step 3:

Warm up a non-stick pan with 1 tbsp of oil. Add the onion and stir fry for roughly a minute.

Step 4:

Crack the remaining eggs into a basin and beat them thoroughly.

Step 5:

Stir in the ginger-garlic paste and cook for a half-minute. Stir in the chicken mince, then simmer for two minutes.

Step 6:

Combine tomatoes, green chillies, salt, turmeric, and red chilli powder. Mix thoroughly after adding 1/4 cup water. Garam masala powder should be added, mixed thoroughly, covered, and simmered on medium heat until the chicken mince is cooked and the mixture is dry.

Step 7:

Warm up a non-stick tawa. You should cook each roti on it for two minutes on each side. Cook the sides with a little oil.

Step 8:

Spread an egg on top and pour some over it. Cook for one minute. Cook the egg until done by flipping it over.

Step 9:

Make a square packet by placing a portion of the cooked chicken mince mixture in the center and folding the sides in. On top, press down and add more beaten egg. Turnover, add a little more oil to the sides and cook while rotating the sides until both are brown and crisp.

Step 10:

Cut into squares and serve warm with coriander or cilantro leaves on top sprinkled for decoration.
